4 large whole wheat tortillas

1 medium zucchini, thinly sliced

2 cups fresh baby spinach

1 cup shredded mozzarella cheese

1/2 cup crumbled feta cheese

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon dried oregano

1 teaspoon red pepper flakes (optional)

Cooking spray or additional olive oil for grilling

Sauté the Vegetables: Begin by heating 2 tablespoons of olive oil in a large skillet over medium heat. Once the oil is hot, add the minced garlic and sauté for about 1 minute, until it becomes fragrant. Introduce the sliced zucchini to the skillet and sauté for around 2-3 minutes, until it begins to soften. Next, add the fresh baby spinach and continue cooking for an additional 1-2 minutes until the spinach is wilted and combined with the zucchini. Season the mixture with salt, pepper, and dried oregano. For an extra kick, sprinkle in red pepper flakes if desired. Remove the skillet from heat and set the vegetable mixture aside.

    Assemble the Wraps: On a clean, flat surface, lay out each tortilla. Evenly distribute the sautéed zucchini and spinach mixture across the center of each tortilla, leaving a small border around the edges. Next, generously sprinkle shredded mozzarella cheese and crumbled feta over the vegetable filling on each tortilla.

      Fold and Secure: To wrap, gently fold the sides of each tortilla over the filling. Then, starting from the bottom edge, roll the tortilla tightly upwards to encase the filling, similar to how you would roll a burrito, ensuring that the edges remain tucked in.

        Grill the Wraps: Preheat a non-stick skillet over medium heat, applying a light coating of cooking spray or a drizzle of olive oil to prevent sticking. Place each wrap seam-side down in the skillet and grill for about 3-4 minutes or until the outside is golden brown and crispy.
