Zucchini Pizza Grilled Cheese

2 medium zucchinis

4 slices of bread (sourdough or whole grain recommended)

1 cup shredded mozzarella cheese

1/2 cup marinara sauce (plus extra for dipping)

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning (or a blend of oregano, basil, and thyme)

1 tablespoon olive oil

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Zucchini: Begin by slicing the zucchinis into thin rounds, about 1/4 inch thick. Place the slices in a colander and sprinkle them generously with salt. Allow them to sit for approximately 10 minutes. This step draws out excess moisture, preventing your grilled cheese from becoming soggy.

    Cook the Zucchini: In a medium skillet over medium heat, add the olive oil and heat until it shimmers. Meanwhile, pat the zucchini slices dry with a paper towel to get rid of any excess moisture. Add the zucchini to the skillet, cooking for around 3-4 minutes on each side, or until they are tender and lightly golden brown. Season with salt, pepper, and Italian seasoning while cooking. Once done, remove from heat and set aside.

      Assemble the Sandwiches: On a slice of bread, spread a generous layer of marinara sauce. Sprinkle a portion of the shredded mozzarella and grated Parmesan cheese over the sauce. Layer on a few slices of the cooked zucchini, then add another sprinkle of cheese before placing a second slice of bread on top to complete the sandwich.
