2 medium zucchinis, spiralized into noodles

1 pound (450g) boneless, skinless chicken breast

2 tablespoons olive oil, divided

Salt and freshly ground black pepper, to taste

1 cup romaine lettuce, chopped into bite-size pieces

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup Caesar dressing (store-bought or homemade)

Optional: croutons for added crunch

Fresh parsley, finely chopped (for garnish)

Instructions
 

Prepare the Chicken: Start by seasoning both sides of the chicken breasts generously with salt and freshly ground black pepper. In a skillet set over medium heat, add 1 tablespoon of olive oil. Once the oil is hot, carefully place the seasoned chicken breasts in the skillet. Cook for approximately 6-7 minutes on each side, or until the chicken is fully cooked through and has a beautiful golden brown exterior.
