2 medium zucchinis, grated

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional for a kick)

2 cups shredded sharp cheddar cheese

1 cup milk (or your preferred plant-based alternative)

1/4 cup cream cheese, softened

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably whole grain)

Salt to taste

Fresh parsley, chopped, for garnish

Cook the Pasta: Fill a large pot with salted water and bring to a boil. Once boiling, add the elbow macaroni and cook according to package directions until al dente. Drain the pasta and set aside, ensuring you reserve some of the pasta water in case you need to adjust the sauce later.

    Prepare the Zucchini: While the pasta cooks, grate the zucchinis using a box grater. Place the grated zucchini into a clean kitchen towel, twist the towel to form a pouch, and squeeze out as much excess liquid as possible. This step is crucial to avoid making your dish watery.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and slightly tender. Stir in the minced garlic and cook for an additional minute until it releases its fragrant aroma.

        Combine Zucchini and Spices: Introduce the grated zucchini to the skillet, stirring well to combine. Sprinkle in the smoked paprika, black pepper, cayenne pepper (if using), and season with salt.
