2 medium zucchinis, grated

1 teaspoon salt

1 cup all-purpose flour

1 large egg

1/2 cup grated Parmesan cheese (or vegan alternative)

1/4 cup chopped fresh parsley (or dill)

3 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon black pepper

1/2 teaspoon baking powder

Olive oil, for frying

For the Garlic Aioli:

1/2 cup mayonnaise (or vegan mayo)

1 clove garlic, minced

1 tablespoon lemon juice

Salt and pepper to taste

Instructions
 

Prepare the Zucchini:

    Grate the zucchinis and place them in a colander. Sprinkle the grated zucchini evenly with 1 teaspoon of salt and let it rest for about 10 minutes. This will allow excess moisture to be drawn out. After 10 minutes, use a clean kitchen towel to gather the grated zucchini and squeeze out any remaining liquid thoroughly to ensure your fritters are not soggy.

      Mix the Fritter Batter:

        In a large mixing bowl, add the squeezed zucchini, 1 cup of all-purpose flour, 1 large egg, 1/2 cup of grated Parmesan cheese (or a vegan alternative), 1/4 cup of chopped fresh parsley (or dill), 3 finely chopped green onions, 2 minced garlic cloves, 1/2 teaspoon of black pepper, and 1/2 teaspoon of baking powder. Stir the mixture well until everything is evenly combined, ensuring no dry flour remains.

          Form the Fritters:

            Take about 2 tablespoons of the zucchini mixture and gently form it into a patty. Repeat this process with the remaining mixture, laying the formed fritters flat on a parchment-lined tray to keep them separate.

              Heat the Oil:

                In a large skillet, pour in enough olive oil to create approximately 1/4 inch of oil in the bottom. Heat the oil over medium heat until it shimmer—this indicates it's ready for frying.

                  Fry Until Golden:

Continue to mix until the aioli is smooth and well combined. Adjust seasoning as desired for that perfect balance.
