Ingredients

2 medium zucchinis

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

½ teaspoon dried oregano

½ teaspoon dried thyme

½ teaspoon salt (adjusted to taste)

¼ teaspoon black pepper

Optional: 1 tablespoon grated Parmesan cheese for an added cheesy flavor

Instructions

Preheat the Oven: Begin by preheating your oven to 225°F (110°C). This low temperature will ensure the zucchini chips become perfectly crispy without burning.

Prepare the Zucchini: Rinse the zucchinis under cold water and pat them dry. Using a sharp knife or a mandoline, slice the zucchinis into thin, even rounds, approximately 1/8 inch thick for optimal crispiness.

Soak the Zucchini Slices: Place the sliced zucchini into a bowl filled with cold water and allow them to soak for about 30 minutes. This soaking process helps to extract excess moisture, resulting in crispier chips.

Mix Seasonings: In a small mixing bowl, whisk together the olive oil, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, salt, and black pepper. If you choose to add Parmesan cheese, incorporate it into this mixture.

Drain and Dry: After the soaking period, drain the zucchini slices thoroughly. Use a clean kitchen towel or paper towels to pat them dry, removing as much moisture as possible; this is key for achieving that crunchy texture.

Coat the Zucchini: In a large mixing bowl, combine the dried zucchini slices with the olive oil seasoning mixture. Toss gently until each slice is evenly coated.

Arrange on Baking Sheets: Line one or two baking sheets with parchment paper. Lay the seasoned zucchini slices in a single layer on the sheets, ensuring they do not overlap. Overlapping can lead to uneven cooking and result in soggy chips.

Bake: Place the baking sheets on the middle rack of your preheated oven. Bake the zucchini chips for 2 to 3 hours, checking every 30 minutes. Flip the chips to promote even crisping. They will be ready when they turn golden brown and acquire a delightful crunchy texture.

Cool and Serve: Once finished, remove the baking sheets from the oven and allow the chips to cool for a few minutes. Serve them up as a healthy, tasty snack on their own, or pair with your favorite dip for added enjoyment!

Store Leftovers: If you have any chips left, store them in an airtight container at room temperature for up to 3 days to maintain their crispiness.

Prep Time: 15 mins | Total Time: 2 hours 30 mins | Servings: 4-6 servings

                        - Presentation Tips: Serve the zucchini chips in a stylish bowl lined with parchment paper, garnishing with a sprinkle of fresh herbs or a small ramekin of dip for an inviting display.
