2 medium zucchinis, grated

1 can (15 oz) black beans, drained and rinsed

1 cup cooked quinoa

1/4 cup finely chopped red onion

2 cloves garlic, minced

1/4 cup fresh parsley, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (plus more for cooking)

Optional: 1/4 cup shredded cheese (e.g., cheddar or a vegan alternative)

Instructions
 

Prep the Zucchini: Start by grating the zucchinis using a box grater. Once grated, place the zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This step is crucial to ensure your burgers have the right texture and don't become too watery.

    Mash the Beans: In a large mixing bowl, combine the drained black beans. Use a fork or a potato masher to mash them until most of the beans are smooth, but retain some texture for a hearty bite.

      Combine Ingredients: Add the squeezed grated zucchini, cooked quinoa, breadcrumbs, chopped red onion, minced garlic, chopped parsley, cumin, smoked paprika, and a pinch of salt and pepper into the bowl with the mashed beans. If you’re including cheese, fold it in at this stage.
