1 cup ricotta cheese

    Salt the Zucchini: Arrange the zucchini slices flat on a clean dish towel and generously sprinkle with salt. Allow them to sit for about 10 minutes. This will help draw out excess moisture. After the time has elapsed, use a second towel to gently pat the slices dry, removing excess salt and moisture.

      Make the Filling: In a medium mixing bowl, combine the ricotta cheese, grated Parmesan cheese, half of the shredded mozzarella cheese, the beaten egg, chopped basil, garlic powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated and create a cohesive filling.

        Roll the Zucchini: Take one zucchini slice and place approximately one tablespoon of the ricotta filling at one end of the strip. Carefully roll the slice up, tucking in the filling as you go, and place it seam-side down in a lightly greased baking dish. Continue this process until all the zucchini slices and filling are used.
