4 medium zucchinis

1 cup heavy cream

2 tablespoons unsalted butter

1/4 teaspoon freshly grated nutmeg (optional)

Fresh parsley, chopped (for garnish)

Prepare the Zoodles: Using a spiralizer, turn the zucchinis into zoodles (zucchini noodles). If you don't have a spiralizer, a vegetable peeler can be used to create thin ribbons. Set the zoodles aside in a bowl.

    Make the Alfredo Sauce: In a large skillet set over medium heat, melt the unsalted butter. Once melted, add the minced garlic and sauté for about 1 minute until it becomes fragrant, stirring frequently to prevent burning.

      Add the Cream: Carefully pour in the heavy cream while stirring gently. Increase the heat to medium-high and allow the cream to simmer for about 2-3 minutes; this will help it thicken slightly.
