1/2 teaspoon cayenne pepper (adjust to your heat preference)

Salt and freshly ground black pepper, to taste

Juice of 1 lime

For the Avocado Cream:

1 ripe avocado, pitted and scooped

1/2 cup sour cream or Greek yogurt

1 tablespoon lime juice

1 clove garlic, minced

Salt and freshly ground black pepper, to taste

1 tablespoon fresh cilantro, chopped (optional, for garnish)

For the Taco Assembly:

8 small corn or flour tortillas

1 cup red cabbage, finely shredded

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1 jalapeño, thinly sliced (optional)

Fresh cilantro leaves (for garnish)

Lime wedges (for serving)

Instructions

Prepare the Shrimp: In a large mixing bowl, add the peeled and deveined shrimp along with olive oil, paprika, cumin, garlic powder, onion powder, cayenne pepper, lime juice, salt, and black pepper. Use your hands or a spatula to gently toss the shrimp until they are thoroughly coated with the marinade. Cover the bowl and let the shrimp marinate for at least 15 minutes, or up to an hour in the refrigerator for deeper flavor.

Make the Avocado Cream: While the shrimp is marinating, prepare the creamy sauce. In a blender or food processor, combine the avocado, sour cream (or Greek yogurt), lime juice, minced garlic, salt, and black pepper. Blend until the mixture is smooth and creamy. Taste the avocado cream and adjust seasoning if needed. Transfer the mixture to a small bowl, cover, and refrigerate until you’re ready to assemble the tacos.

Cook the Shrimp: Heat a large skillet over medium-high heat. Once the skillet is hot, add the marinated shrimp to the pan, spreading them out in a single layer. Cook for 2-3 minutes on each side or until the shrimp turn pink and opaque. Remove from heat and set aside.

Warm the Tortillas: In a separate skillet or directly over an open flame, warm the tortillas for about 30 seconds per side, until they are soft and pliable. Stack the warmed tortillas and keep them covered with a clean kitchen towel to retain heat.

Assemble the Tacos: On each tortilla, layer a portion of the cooked shrimp, followed by a generous amount of shredded red cabbage, halved cherry tomatoes, diced red onion, and jalapeño slices if desired. Drizzle a hefty spoonful of the avocado cream over the top and finish with a sprinkle of fresh cilantro leaves.

Serve: Serve the tacos immediately while they’re fresh and warm, accompanied by lime wedges for an extra squeeze of zest over the tacos.
