1 tablespoon olive oil

Juice of 1 fresh lime

8 small corn or flour tortillas

Sauté Aromatics: Begin by heating the olive oil in a large skillet over medium heat. Add the chopped red onion and sauté for approximately 3-4 minutes, or until it turns translucent. Next, introduce the minced garlic and diced jalapeño, cooking for an additional 1-2 minutes until the garlic is fragrant and the jalapeño has softened.

    Combine Beans and Corn: To the skillet, stir in the drained black beans and corn kernels. Sprinkle in the ground cumin, chili powder, salt, and pepper. Mix everything thoroughly and allow the mixture to cook for about 5-7 minutes, stirring occasionally, until it is heated through and flavors meld beautifully.

      Enhance with Lime Juice: After removing the skillet from the heat, squeeze the juice of a fresh lime over the warm mixture. Stir well to incorporate the lime juice, and taste to adjust seasoning if necessary.

        Warm the Tortillas: In a separate dry skillet over medium heat, warm each tortilla for about 30 seconds on each side until they become pliable but are not crispy. Alternatively, you can wrap the tortillas in a damp paper towel and microwave them for 20-30 seconds to warm them quickly.
