1 medium head of cauliflower, cut into small florets

1 cup BBQ sauce (choose your favorite brand or make your own)

1 cup shredded sharp cheddar cheese

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1 tbsp olive oil

Salt and pepper, to taste

4 large flour or whole wheat tortillas

1 cup fresh spinach or mixed greens

1 ripe avocado, sliced

Optional: sliced jalapeños for an extra kick

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup easier.

    Prepare the Cauliflower: In a large mixing bowl, combine the cauliflower florets with the olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss well until the cauliflower is evenly coated with the spices and oil.

      Roast the Cauliflower: Transfer the seasoned cauliflower florets onto the lined baking sheet, spreading them out in a single layer for even roasting. Place the baking sheet in the preheated oven and roast for approximately 20-25 minutes, or until the cauliflower is tender and slightly caramelized. Remember to toss the florets halfway through the roasting time to ensure even cooking.

        Add BBQ Sauce: Once the cauliflower is roasted, remove it from the oven and drizzle ½ cup of BBQ sauce over the hot florets.
