4 cups of seedless watermelon, cut into 1-inch cubes

2 medium cucumbers, diced (peeling is optional, based on preference)

1 cup feta cheese, crumbled into bite-sized pieces

1/2 red onion, thinly sliced

1/4 cup fresh mint leaves, chopped coarsely

1/4 cup extra virgin olive oil

2 tablespoons balsamic vinegar

Salt and freshly cracked black pepper, to taste

Juice of 1 lime (about 2 tablespoons)

In a large mixing bowl, gently combine the diced watermelon, diced cucumbers, crumbled feta cheese, and thinly sliced red onion. Ensure the ingredients are evenly distributed.

    In a separate small bowl, whisk together the extra virgin olive oil, balsamic vinegar, lime juice, salt, and freshly cracked black pepper. This will be your flavorful dressing.
