Ingredients

1 cup rolled oats

1 cup all-purpose flour

1/2 cup packed brown sugar

1/2 cup granulated sugar

1/2 cup unsalted butter, softened at room temperature

1/4 cup honey

1 large egg

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup raisins

1/2 cup chopped walnuts (optional)

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). While the oven heats, line two baking sheets with parchment paper for easy cleanup and to prevent sticking.

Prepare Dry Ingredients: In a medium mixing bowl, whisk together the rolled oats, all-purpose flour, ground cinnamon, baking soda, baking powder, and salt until all the dry ingredients are evenly combined.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer to beat together the softened butter, packed brown sugar, and granulated sugar. Continue mixing for about 2-3 minutes until the mixture is light, fluffy, and well combined.

Incorporate Wet Ingredients: To the creamed butter and sugar mixture, add the honey, large egg, and vanilla extract. Mix on medium speed until all wet ingredients are fully integrated into the mixture.

Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Take care not to overmix, as this could make the cookies tough.

Add Raisins and Nuts: Carefully fold in the raisins and optional chopped walnuts until they are evenly distributed throughout the cookie dough.

Scoop the Cookie Dough: Using a tablespoon or a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets. Make sure to leave approximately 2 inches of space between each scoop to allow for spreading while baking.

Bake: Place the baking sheets in the preheated oven and bake for 10-12 minutes. Keep an eye on them; you want the edges to turn golden brown, while the centers should still look slightly soft.

Cool the Cookies: Once baked, remove the sheets from the oven and let the cookies cool on the sheets for about 5 minutes. After that, transfer the cookies gently to a wire rack to cool completely.

Serve and Enjoy: These delicious cookies are best enjoyed warm! Pair them with a glass of milk or your favorite beverage to savor the cozy flavors of cinnamon and honey.
