1 cup coconut milk (either canned or from a carton)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon vanilla extract

1/2 teaspoon almond extract (optional for a nutty flavor)

1 ripe banana, sliced into rounds

1 cup fresh pineapple, diced into small pieces

1/2 cup fresh mango, diced

1/4 cup shredded coconut, toasted for an enhanced flavor

Fresh mint leaves for garnish (optional, for a pop of color)

Instructions
 

In a medium-sized mixing bowl, combine the coconut milk, chia seeds, honey (or maple syrup), vanilla extract, and almond extract. Use a whisk to mix the ingredients thoroughly until the chia seeds are evenly distributed and the mixture is smooth.

    Cover the bowl with a lid or plastic wrap and place it in the refrigerator. Let it chill for at least 2 hours or preferably overnight. This allows the chia seeds to absorb the liquid and develop a gel-like consistency.

      Once the chia pudding has set, give it a gentle stir to ensure an even texture.

        To assemble the parfaits, start with your serving glasses or bowls. Begin by spooning a generous layer of chia pudding into the bottom of each glass.

          Add a layer of sliced bananas on top of the chia pudding, followed by a layer of diced pineapple.

            Next, layer in the diced mango, and then follow with a second layer of chia pudding.

              Continue the layering process until the glasses are filled to your desired height, finishing with a vibrant layer of mango on top.
