1 block extra-firm tofu (14 oz), pressed and drained

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 fresh lime

For the Cherry Slaw:

1 cup fresh cherries, pitted and thinly sliced

2 cups green cabbage, finely shredded

1 small red onion, finely chopped

1 medium carrot, grated

2 tablespoons fresh cilantro, roughly chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

Salt to taste

For Assembly:

8 small corn or flour tortillas

Fresh avocado slices (optional)

Lime wedges for serving

Prepare the Tofu:

    Cut the pressed tofu into small cubes. In a mixing bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, salt, and pepper. Gently toss the tofu cubes in this spice mixture until they are evenly coated. Allow the tofu to marinate for 10-15 minutes to absorb the flavors.

      Cook the Tofu:

        Preheat a non-stick skillet over medium-high heat. Add the marinated tofu cubes to the pan and cook for around 8-10 minutes, turning occasionally. Cook until all sides are golden brown and crispy. Just before removing the tofu from the heat, squeeze fresh lime juice over it for a burst of flavor.

          Prepare the Cherry Slaw:

            In a large mixing bowl, combine the sliced cherries, shredded cabbage, chopped red onion, grated carrot, and cilantro.
