Ingredients

3 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1 cup warm milk (110°F/43°C)

¼ cup granulated sugar

½ cup unsalted butter, melted (plus additional for brushing)

1 large egg

1 tsp salt

3 cloves of garlic, minced

2 tbsp fresh parsley, finely chopped

1 tsp garlic powder

¼ tsp red pepper flakes (optional for a bit of heat)

½ cup grated Parmesan cheese

Sea salt, for sprinkling

Instructions

Activate the Yeast: In a small bowl, combine the warm milk and granulated sugar. Sprinkle the active dry yeast on top, allowing it to dissolve. Let it sit for about 5-10 minutes until it becomes frothy—a sign that the yeast is alive and ready to use.

Make the Dough: In a large mixing bowl or a stand mixer, combine the all-purpose flour and salt. Create a well in the center of the flour mixture, and pour in the frothy yeast mixture, melted butter, and the egg. Stir everything together until a cohesive dough begins to form.

Knead the Dough: Transfer the dough to a lightly floured surface. Knead by hand for about 8-10 minutes, or until it is smooth and elastic. Alternatively, if using a stand mixer fitted with a dough hook, knead on medium speed for about 5 minutes.

First Rise: Lightly grease a large bowl and place the dough inside. Cover the bowl with a damp cloth or plastic wrap, and place it in a warm area. Allow it to rise for about 1 hour or until it has doubled in size.

Prepare Garlic Butter: While the dough is rising, melt the remaining ½ cup of butter in a small saucepan over low heat. Add the minced garlic, garlic powder, and red pepper flakes (if using). Sauté for 2-3 minutes until fragrant, then remove from heat and stir in the chopped parsley.

Shape the Rolls: Once the dough has risen, punch it down to release the air. Divide the dough into 12 equal pieces. Roll each piece into a rope about 10 inches long, then tie each rope into a knot. Arrange the knots on a parchment-lined baking sheet, ensuring they are spaced a little apart.

Second Rise: Cover the knots loosely with plastic wrap or a kitchen towel. Allow them to rise for another 30 minutes until puffy.

Preheat Oven: Preheat your oven to 375°F (190°C).

Brush with Garlic Butter: After the second rise, take your prepared garlic butter and generously brush the tops of the knots. Sprinkle grated Parmesan cheese and a pinch of sea salt over each roll for an extra burst of flavor.

Bake: Place the rolls in the preheated oven and bake for 15-20 minutes, or until they are golden brown and deliciously fragrant.

Serve: Once baked, remove the rolls from the oven and drizzle any remaining garlic butter over the top. Serve these delightful rolls warm, and revel in their garlicky goodness!
