Ingredients

3 cups rolled oats

1 cup slivered almonds

1 cup shredded unsweetened coconut

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1 tsp vanilla extract

1/2 tsp sea salt

1 tsp ground cinnamon

1/2 cup dried fruit (such as cranberries, apricots, or cherries) - optional

1/2 cup chocolate chips or cacao nibs - optional

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper to prevent sticking and facilitate easy cleanup.

Mix Dry Ingredients: In a spacious mixing bowl, add the rolled oats, slivered almonds, shredded coconut, sea salt, and ground cinnamon. Use a wooden spoon or spatula to stir the mixture thoroughly, ensuring all dry ingredients are evenly combined.

Combine Wet Ingredients: In a separate mixing bowl, pour in the melted coconut oil. Add the honey or maple syrup and the vanilla extract. Whisk these ingredients together until the mixture is smooth and well blended, creating a syrupy consistency.

Combine Mixtures: Carefully pour the wet mixture over the dry ingredients in the large bowl. Stir vigorously to ensure that all of the oats and nuts are well coated with the syrup, creating a cohesive granola mix.

Spread and Bake: Transfer the granola mixture onto the prepared baking sheet. Using a spatula, spread the mixture out evenly across the sheet, then gently press it down to encourage clumping during baking.

Bake: Place the baking sheet in the preheated oven and bake for approximately 20-25 minutes. Halfway through baking, stir the granola to promote even toasting. Keep a close eye on it to avoid burning; you're looking for a beautiful golden brown color.

Cool and Add Extras: After baking, carefully remove the baking sheet from the oven and let the granola cool completely on the sheet. If you choose to add dried fruit or chocolate chips, mix them in once the granola has cooled to ensure they don’t melt.

Store: Once the granola is completely cool, transfer it into an airtight container. Store it at room temperature, where it will remain fresh for up to two weeks.

Serve: Relish your toasty almond coconut granola as a delightful breakfast cereal paired with milk or yogurt, or use it as a crunchy topping for smoothie bowls and desserts for an extra flavor dimension!
