For the Cake Layers:

2 cups all-purpose flour

1 ½ teaspoons baking powder

½ teaspoon baking soda

½ teaspoon salt

½ cup (1 stick) unsalted butter, softened to room temperature

1 cup granulated sugar

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 cup buttermilk, at room temperature

For the Coffee Soak:

1 cup strong brewed coffee, cooled to room temperature

2 tablespoons coffee liqueur (optional, for added depth)

2 tablespoons granulated sugar

For the Mascarpone Filling:

1 ½ cups mascarpone cheese, at room temperature

1 cup heavy whipping cream, chilled

½ cup powdered sugar

1 teaspoon vanilla extract

2 tablespoons cocoa powder, for dusting

For Garnish:

Dark chocolate shavings

Additional cocoa powder for dusting

Instructions
 

Prepare the Cake Layers:

    - Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure easy removal later.

      - In a medium mixing bowl, sift together the flour, baking powder, baking soda, and salt. Set this mixture aside.

        - In a large mixing bowl, cream the softened butter and granulated sugar together using an electric mixer until the mixture is light and fluffy, about 3-5 minutes.

          - Beat in the eggs, one at a time, ensuring each egg is well incorporated before adding the next. Then mix in the vanilla extract.

            - Gradually add the reserved dry flour mixture to the creamy batter, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until everything is just combined; do not overmix.

              - Divide the batter evenly between the two prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

                Make the Coffee Soak:

                  - In a small bowl, combine the cooled brewed coffee, optional coffee liqueur, and granulated sugar. Stir until the sugar is fully dissolved. Set aside for later use.

                    Prepare the Mascarpone Filling:

                      - In a large bowl, beat the mascarpone cheese with a hand mixer until smooth and creamy.

                        - In another chilled bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.

                          - Gently fold the whipped cream into the mascarpone cheese until fully combined, creating a light and airy filling.

                            Assemble the Cake:

                              - Once the cake layers have completely cooled, carefully slice each layer in half horizontally to create four thinner layers in total.

                                - Place the first layer on a serving plate and generously brush it with the coffee soak.

                                  - Spread one-third of the mascarpone filling over this layer, smoothing it out evenly. Repeat the soaking and layering process with the next two layers, then finish with the fourth layer on top.

                                    Frost the Cake:

                                      - Use any remaining mascarpone filling to frost the top and sides of the assembled cake, smoothing it for a clean finish.

                                        - Lightly dust the top with cocoa powder and finish with elegant dark chocolate shavings for a refined appearance.

                                          Chill and Serve:
