1 cup blue crab meat (fresh, cleaned, or canned, drained and flaked)

3 tablespoons vegetable oil

3 cloves garlic, minced

1 small onion, finely diced

2 large eggs, beaten

1 cup mixed vegetables (peas, carrots, and corn)

3-4 green onions, chopped

2 tablespoons soy sauce

1 tablespoon fish sauce

1 teaspoon sugar

1/2 teaspoon white pepper

Juice of 1 lime

Fresh cilantro, for garnish

Prepare the Ingredients: If using fresh crab, ensure it is properly cleaned, and remove the meat from the shell. For canned crab meat, simply drain and flake it. Using day-old jasmine rice helps avoid mushiness in the fried rice.

    Heat the Oil: In a large wok or a non-stick skillet, pour in the vegetable oil and heat it over medium-high heat until shimmering and hot.

      Sauté Aromatics: Add the minced garlic and diced onion to the hot oil. Stir-fry for 1-2 minutes until they release a fragrant aroma and the onion turns translucent.
