4 salmon fillets (6 oz each, skin on)

½ cup soy sauce

¼ cup mirin (Japanese sweet rice wine)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 cloves garlic, minced

1 inch piece of ginger, grated

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon water (if thickening)

For the Steamed Broccoli Rice:

2 cups broccoli florets (fresh or frozen)

1 cup jasmine or brown rice (uncooked)

2 cups water or vegetable broth (for cooking rice)

Salt and pepper, to taste

Sesame seeds and chopped green onions, for garnish

Make the Teriyaki Marinade: In a medium bowl, whisk together the soy sauce, mirin, honey or maple syrup, rice vinegar, sesame oil, minced garlic, and grated ginger. If you prefer a thicker sauce, mix the cornstarch with water to create a slurry and stir it into the marinade until smooth and well blended.

    Marinate the Salmon: Set the salmon fillets in a shallow dish and pour the prepared teriyaki marinade over them. Ensure the fillets are well-coated. Cover the dish with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to meld. For optimal flavor absorption, marinate for 1-2 hours.

      Cook the Rice: Rinse the uncooked rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the rinsed rice with the water or vegetable broth and add a pinch of salt. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer. For jasmine rice, cook for 15-20 minutes; for brown rice, cook for 40-45 minutes until all the liquid is absorbed. After cooking, remove from the heat and let it sit, covered, for 5 minutes to steam.

        Prepare the Broccoli: While the rice is cooking, steam the broccoli florets. You can use a steamer basket, or microwave the florets in a covered bowl with a splash of water. Steam until the broccoli is bright green and tender, approximately 5-7 minutes.

          Create Broccoli Rice: Once steamed, transfer the broccoli to a food processor and pulse it until it resembles rice. For a manual option, finely chop the broccoli by hand. Combine the blended broccoli rice with the cooked rice. Season the mixture with salt and pepper according to your taste.

            Cook the Salmon: Preheat your grill or a non-stick skillet over medium-high heat. Remove the salmon from the marinade (reserving the marinade) and place the fillets skin-side down in the skillet or on the grill. Cook for about 4-5 minutes on each side. Baste the salmon with the reserved marinade while cooking to enhance flavor. Ensure that the salmon is cooked to an internal temperature of 145°F (63°C).

              Serve: Fluff the broccoli rice with a fork and divide it evenly among four plates. Top each plate with a salmon fillet. Drizzle any remaining teriyaki sauce over the salmon. Garnish with sesame seeds and chopped green onions for an appealing visual touch.
