2 salmon fillets (6 oz each)

1 cup brown rice

2 cups water or low-sodium chicken broth

1 cup broccoli florets

1 cup sliced bell peppers (preferably a mix of red and yellow for color)

½ cup shredded carrots

2 tablespoons olive oil, divided

¼ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame seeds for garnish

2 green onions, finely chopped for garnish

Cook the Brown Rice:

    Begin by rinsing the brown rice under cold water to remove excess starch. In a medium saucepan, combine the rinsed rice and 2 cups of water or chicken broth. Add a pinch of salt for flavor. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for approximately 40-45 minutes, or until the rice is tender and the liquid has been absorbed. Once cooked, fluff the rice gently with a fork and set it aside.

      Prepare the Vegetables:

        Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the broccoli florets, sliced bell peppers, and shredded carrots to the skillet.
