1 cup fresh parsley, finely chopped

1/2 cup fresh basil, finely chopped

2 cloves garlic, minced

1 tbsp lemon zest (from about 1 lemon)

1/4 cup nutritional yeast

1/2 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup olive oil (plus more for drizzling)

Salt and pepper to taste

1 tbsp balsamic vinegar (optional, for glaze)

Prepare the Tofu: Begin by pressing the tofu to extract as much moisture as possible, enhancing flavor absorption and texture. Wrap the tofu in a clean kitchen towel or several layers of paper towels, place it on a plate, and set a heavy object (like a cast-iron skillet or weighted dish) on top for about 30 minutes.

    Make the Herb Mixture: In a medium-sized mixing bowl, combine the finely chopped parsley, basil, minced garlic, lemon zest, nutritional yeast, breadcrumbs, and a generous pinch of salt and pepper. Stir thoroughly until all ingredients are evenly mixed, creating a vibrant herb blend.
