Ingredients

1 lb (450g) flank steak, cut into 1-inch cubes

1/4 cup unsalted butter, softened to room temperature

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 tablespoon extra virgin olive oil

2 tablespoons balsamic vinegar

1 red bell pepper, cut into 1-inch pieces

1 yellow bell pepper, cut into 1-inch pieces

1 large red onion, cut into wedges

Skewers (if using wooden skewers, soak in water for 30 minutes to prevent burning)

Instructions

Prepare the Herb Butter: In a medium bowl, combine the softened butter, finely chopped rosemary, thyme, minced garlic, smoked paprika, sea salt, and black pepper. Stir thoroughly until all the ingredients are completely blended. Cover and refrigerate the herb butter to firm up while you prepare the steak.

Marinate the Steak: In a large mixing bowl, whisk together the olive oil and balsamic vinegar. Add the cubed flank steak to the bowl, ensuring each piece is well coated with the marinade. Cover the bowl with plastic wrap and refrigerate to marinate for at least 30 minutes, or up to 2 hours for a more robust flavor infusion.

Assemble the Skewers: Preheat your grill or grill pan to medium-high heat. Once heated, begin threading the marinated steak pieces onto the skewers, alternating with the red and yellow bell pepper chunks and onion wedges. Aim for 4-5 pieces of steak per skewer, interspersed with colorful veggies for an appealing presentation.

Grill the Skewers: Carefully place the assembled skewers onto the preheated grill. Cook for approximately 3-4 minutes on each side, turning occasionally to ensure even cooking. Monitor the internal temperature: 130°F for medium-rare and 145°F for medium. In the final minute of grilling, brush the skewers generously with the prepared herb butter to enhance flavor and moisture.

Rest and Serve: After grilling, remove the skewers from the grill and allow them to rest for about 5 minutes to let the juices redistribute. Serve immediately, drizzled with any remaining herb butter and garnish with extra fresh herbs for a touch of freshness.
