2 medium zucchinis, spiralized into zoodles

1 lb (450g) boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 cup cherry tomatoes, halved

1 cup corn (fresh, frozen, or canned)

1 ripe avocado, diced

1/2 cup black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Optional toppings: sour cream, shredded cheese, sliced jalapeños

Prepare the Chicken: In a small mixing bowl, combine the chili powder, ground cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper. Rub this spice blend evenly across both sides of the chicken breasts, ensuring they're well-coated.

    Cook the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the seasoned chicken breasts to the skillet. Cook for approximately 5-7 minutes on each side, until they are golden brown and the internal temperature reaches 165°F (75°C). Once cooked, remove the chicken from the skillet and set it aside to rest for a few minutes before slicing it into thin strips.

      Sauté the Zoodles: In the same skillet, add the spiralized zoodles and sauté over medium heat for about 2-3 minutes. Cook until the zoodles are slightly tender yet still have a crisp texture, and then remove them from heat.

        Combine Ingredients: In a large mixing bowl, combine the sautéed zoodles, halved cherry tomatoes, corn, diced avocado, black beans, and chopped cilantro. Drizzle the juice of the lime over the mixture, then gently toss everything together to evenly incorporate all the flavors.
