Sweet Strawberry Cheesecake Dip

8 oz (225 g) cream cheese, softened to room temperature

1 cup (120 g) powdered sugar

1 teaspoon pure vanilla extract

½ cup (120 ml) sour cream

½ cup (125 ml) Greek yogurt, plain

1 cup (150 g) fresh strawberries, hulled and finely chopped

1 tablespoon fresh lemon juice

Crushed graham crackers, for serving

Additional fresh strawberries and fresh mint leaves, for garnish

Instructions
 

In a large mixing bowl, use an electric mixer on medium speed to beat the softened cream cheese until it is smooth and creamy, ensuring there are no lumps—this should take about 2-3 minutes.

    Gradually incorporate the powdered sugar into the cream cheese, mixing continuously until the mixture is fluffy and well-blended, approximately 1-2 minutes more.

      Add the pure vanilla extract and sour cream to the bowl, mixing until fully integrated and smooth. Scrape down the sides of the bowl as needed to ensure even mixing.

        Gently fold in the Greek yogurt using a spatula, being careful to maintain the lightness of the mixture until the yogurt is completely blended.

          In a small separate bowl, combine the finely chopped strawberries with the fresh lemon juice. Let this mixture sit for about 5 minutes to allow the flavors to meld beautifully.

            Carefully fold the strawberry-lemon mixture into the cream cheese mixture, being cautious not to mash the strawberries too much—maintaining some larger chunks will enhance the texture.

              Spoon the dip into a decorative serving bowl and cover it with plastic wrap. Chill in the refrigerator for at least 30 minutes to allow the flavors to deepen.

                Just before serving, sprinkle a generous amount of crushed graham crackers on top of the dip, and garnish with additional fresh strawberries and a sprinkle of mint leaves for a pop of color.
