1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup fresh pineapple chunks (or canned, drained and rinsed)

1 bell pepper (red or yellow), cut into thin strips

1 medium onion, sliced

2 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

2 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust according to your spice preference)

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 tablespoons vegetable oil (for frying)

Salt and pepper to taste

Optional: chopped green onions and sesame seeds for garnish

Instructions
 

Prepare the Sauce: In a medium mixing bowl, thoroughly whisk together the soy sauce, honey, sriracha, rice vinegar, and the cornstarch slurry until smooth and well combined. Set aside for later use.

    Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the sliced chicken thighs and season them generously with salt and pepper. Stir-fry for about 5-7 minutes, or until the chicken is nicely browned and cooked through. Remove the chicken from the skillet and set it aside on a plate.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Once heated, add the sliced onions and bell peppers. Stir-fry for about 3-4 minutes, allowing them to soften slightly while still retaining some crispness. Add the minced garlic and ginger, and continue to cook for another minute, stirring frequently until fragrant.

        Combine Everything: Return the cooked chicken to the skillet with the sautéed vegetables. Gently add the pineapple chunks along with the prepared sauce. Stir everything together well, making sure all ingredients are evenly coated. Cook for an additional 2-3 minutes, allowing the sauce to thicken and envelop the chicken and vegetables beautifully.

          Serve: Remove the skillet from the heat. If desired, garnish your stir fry with chopped green onions and a sprinkle of sesame seeds for added crunch and flavor. Serve hot over a bed of steamed rice or alongside noodles for a complete meal.
