1 cup whole wheat flour

1/2 cup brown sugar, packed

1/2 cup pure pumpkin puree

1/2 cup unsweetened applesauce

1/4 cup milk (or a dairy-free alternative like almond or oat milk)

2 large eggs, at room temperature

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground ginger

1/4 teaspoon salt

Optional: 1/2 cup chopped pecans or walnuts

Optional: 1/4 cup chocolate chips or raisins

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners or lightly greasing each cup with non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, whole wheat flour, packed brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt. Use a whisk or spoon to stir the mixture until it is evenly combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, unsweetened applesauce, milk, eggs, and vanilla extract until the mixture is smooth and well-blended.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Gently stir until just combined, being careful not to overmix; a few lumps in the batter are perfectly fine. If desired, fold in the chopped pecans, walnuts, chocolate chips, or raisins at this stage.
