Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon ground cumin

Salt and black pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup cherry tomatoes, halved

1 cup shredded cheese (cheddar or a dairy-free alternative)

½ cup sliced jalapeños (optional for added heat)

1 ripe avocado, diced

¼ cup fresh cilantro, chopped

¼ cup sour cream or Greek yogurt (optional)

Lime wedges, for serving

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C) to get it ready for baking.

Prepare the Sweet Potatoes: Thoroughly wash and scrub each sweet potato to remove any dirt. Carefully cut them into thin, uniform slices, about 1/4 inch thick, ensuring even cooking throughout.

Season the Sweet Potatoes: In a large mixing bowl, combine the sweet potato slices with olive oil, paprika, garlic powder, onion powder, cumin, salt, and black pepper. Toss everything well until each slice is completely coated in the seasoning blend.

Bake the Sweet Potatoes: On a baking sheet lined with parchment paper, spread the seasoned sweet potato slices in a single layer. Place them in the preheated oven and bake for 25-30 minutes. Be sure to flip the slices halfway through the baking time to achieve tender sweetness with a slightly crisp texture.

Layer the Nachos: Once the sweet potato slices are perfectly baked, take them out of the oven and reduce the temperature to 375°F (190°C). Arrange the sweet potato slices on a large baking dish or return to the parchment-lined baking sheet. Layer on the black beans, corn, halved cherry tomatoes, and sliced jalapeños, then generously top with shredded cheese.

Melt the Cheese: Place the layered nachos back in the oven for an additional 10-15 minutes, or until the cheese melts beautifully and begins to bubble.

Garnish and Serve: Carefully remove the nachos from the oven and let them cool for a few minutes. Right before serving, sprinkle the dish with diced avocado and fresh cilantro. Offer sour cream or Greek yogurt on the side for dipping, and garnish with lime wedges for an added zest.

Enjoy your Sweet Potato Nachos Delight, where a delightful combination of healthy ingredients meets a comforting indulgence that’s bound to impress everyone around the table!
