2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 can (15 oz) black beans, drained and rinsed thoroughly

1 can (15 oz) kidney beans, drained and rinsed thoroughly

1 can (14.5 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

3 cloves garlic, minced

1 bell pepper (any color), chopped into bite-sized pieces

2 cups vegetable broth (low-sodium preferred)

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt (adjust to taste)

½ teaspoon black pepper

1 tablespoon olive oil

Optional toppings: avocado slices, fresh cilantro, shredded cheese, sour cream, lime wedges
