2 cups fresh peaches, peeled and diced

1 tablespoon fresh lemon juice

1/4 cup granulated sugar

1 teaspoon cornstarch

1 teaspoon pure vanilla extract

1 1/2 cups all-purpose flour

1/2 cup old-fashioned rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, cold and diced

1/2 teaspoon ground cinnamon (optional)

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare a 9x9 inch baking pan by greasing it lightly with butter or lining it with parchment paper, which will help in easy removal later.

    Prepare the Peach Filling: In a medium-sized bowl, combine the diced peaches with the lemon juice, granulated sugar, cornstarch, and vanilla extract. Toss the mixture gently until the peaches are uniformly coated. Let this mixture sit and marinate for about 10 minutes to enhance the flavor.

      Make the Crust and Crumble Topping: In a large bowl, whisk together the all-purpose flour, rolled oats, brown sugar, baking powder, salt, and optional cinnamon. Add the cold diced butter to the dry ingredients. Use a pastry cutter, a fork, or your fingers to blend the ingredients until the mixture resembles coarse crumbs.
