1 cup sweet corn kernels (fresh, frozen or canned)

1/2 cup red bell pepper, diced into small pieces

1/2 cup green onions, finely chopped

1/2 cup celery, diced

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 teaspoon Dijon mustard

1 tablespoon honey

1/2 teaspoon garlic powder

1/4 teaspoon paprika

Salt and pepper, to taste

Fresh parsley or cilantro for garnish (optional)

Cook the Macaroni: Bring a large pot of salted water to a rolling boil. Add the elbow macaroni and cook according to the package instructions until it reaches 'al dente', usually about 8-10 minutes. Once cooked, drain it in a colander and rinse it under cold running water to halt the cooking process. Set the macaroni aside to cool completely.

    Prepare Vegetables: While the macaroni is cooling, take the time to wash the red bell pepper, green onions, and celery. Chop the red bell pepper and celery into small, uniform pieces to ensure even mixing and a delightful texture. Finely chop the green onions, including the green tops for added freshness.
