4 cups fresh sweet corn (approximately 6-8 ears)

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium Yukon Gold or red potatoes, diced

4 cups vegetable broth or chicken broth

1 cup whole milk or coconut milk (for a dairy-free alternative)

1 tablespoon olive oil or butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

Fresh chives or parsley, chopped, for garnish

Prepare the Corn: If using fresh corn, shuck the ears and carefully slice the kernels off the cob using a sharp knife. Set the corn aside. Alternatively, if fresh corn isn't available, you may use frozen corn; simply measure out 4 cups.

    Sauté the Aromatics: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and sauté for about 5 minutes, until the onion becomes soft and translucent. Then, incorporate the minced garlic and continue to sauté for an additional 1-2 minutes until it releases its aromatic flavor.

      Add Potatoes and Broth: Introduce the diced potatoes to the pot, followed by the dried thyme, smoked paprika, and a pinch of salt and pepper. Pour in the vegetable or chicken broth and stir to combine. Bring the mixture to a rolling boil.
