8 ounces cream cheese, softened to room temperature

1 cup shredded sharp cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup frozen sweet corn, thawed

4 slices bacon, cooked until crispy and crumbled

1 small onion, finely chopped

1 jalapeño, deseeded and finely chopped (optional for added heat)

1 can (10 ounces) diced tomatoes with green chilies, drained

1 teaspoon garlic powder

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

Cook the Bacon: In a skillet over medium heat, cook the bacon slices until they are crispy, about 6-8 minutes. Once done, transfer them to a paper towel-lined plate to drain excess grease. Set aside about 1 tablespoon of the bacon grease in the skillet for later use.

    Sauté the Vegetables: Using the reserved bacon grease in the skillet, add the finely chopped onion along with the jalapeño (if you're using it). Sauté for about 3-5 minutes, or until the onion is soft and translucent.

      Prepare the Cheese Mixture: In a large mixing bowl, combine the softened cream cheese, shredded sharp cheddar, and shredded Monterey Jack cheese. Use a spatula or mixer to thoroughly blend the ingredients until smooth and well combined.

        Incorporate Additional Ingredients: Gently fold the sautéed onion and jalapeño mixture, thawed sweet corn, crumbled bacon (reserve a small portion for garnish), drained diced tomatoes with green chilies, garlic powder, ground cumin, and salt and pepper into the cheese mixture. Stir well until all ingredients are uniformly combined.

          Heat the Mixture: Transfer the combined mixture into a slow cooker set on low heat, and warm for approximately 30-40 minutes, stirring occasionally to ensure even melting. Alternatively, you can bake the mixture in a preheated oven at 350°F (175°C) for about 20-25 minutes, or until the cheese is bubbly and melted.

            Garnish: Once the dip is hot and gooey, remove it from the cooker or oven. Top the warm dip with the reserved crumbled bacon and a generous sprinkle of fresh cilantro to add a pop of color and flavor.
