1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

1 ripe mango, diced into small cubes

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon freshly squeezed lime juice

2 cloves garlic, finely minced

1 teaspoon fresh ginger, grated

1 tablespoon olive oil

Salt and freshly ground black pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Optional: sesame seeds for an added crunch and garnish

Marinate the Chicken: In a mixing bowl, whisk together the sweet chili sauce, soy sauce, lime juice, minced garlic, grated ginger, and a pinch of salt and pepper until well combined. Add the chicken pieces to the bowl, ensuring they are evenly coated in the marinade. Cover the bowl with plastic wrap and place it in the refrigerator for at least 30 minutes, or up to 1 hour for maximum flavor.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Remove the chicken from the marinade, reserving the marinade for later use.
