Ingredients

1 lb (450g) chicken breast, diced into bite-sized pieces

1 cup fresh pineapple chunks (fresh or canned, drained if using canned)

1 red bell pepper, sliced into thin strips

1 green bell pepper, sliced into thin strips

1 small onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup soy sauce

1/4 cup honey

1 tablespoon sriracha (adjust based on your spice preference)

2 tablespoons rice vinegar

1 tablespoon cornstarch

2 tablespoons vegetable oil (or any cooking oil of your choice)

1 teaspoon sesame oil

Salt and pepper to taste

Green onions, finely chopped, for garnish

Sesame seeds, for garnish

Instructions

Marinate the Chicken: In a medium bowl, combine the diced chicken with soy sauce, honey, sriracha, rice vinegar, minced garlic, and ginger. Stir well to fully coat all chicken pieces with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours for maximum flavor infusion.

Prepare the Sauce: In another small bowl, whisk together the cornstarch and 2 tablespoons of water until smooth to create a slurry. Once the chicken has marinated, add this slurry to the chicken mixture and stir until all elements are well combined.

Cook the Chicken: Heat vegetable oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the marinated chicken mixture to the skillet. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned, cooked through, and has absorbed the flavors of the marinade.

Add the Vegetables: Incorporate the chopped onion and sliced bell peppers into the skillet with the chicken. Sauté for another 3-4 minutes, stirring occasionally, until the vegetables are tender yet still maintain a slight crunch.

Incorporate Pineapple: Gently fold in the pineapple chunks and allow everything to cook together for an additional 2-3 minutes. This step allows the sweet juices from the pineapple to meld beautifully with the chicken and vegetables.

Finish the Dish: Remove the skillet from heat and drizzle the sesame oil over the mixture. Season with salt and pepper to taste, mixing well to ensure even seasoning.

Serve: Serve the Sweet and Spicy Pineapple Chicken over a bed of fluffy rice or noodles. Garnish the dish with freshly chopped green onions and a sprinkle of sesame seeds for an extra touch of flavor and texture.
