14 oz firm tofu, drained and pressed

1 cup mixed bell peppers, sliced (red, yellow, green)

1 cup broccoli florets

1 cup snap peas

1 small onion, thinly sliced

3 cloves garlic, minced

1 inch piece of fresh ginger, grated

2 tablespoons cornstarch

3 tablespoons vegetable oil, divided

1/4 cup low-sodium soy sauce

1/4 cup rice vinegar

1/4 cup brown sugar

1 tablespoon ketchup

1 tablespoon sesame oil

1 teaspoon red pepper flakes (adjust based on spice preference)

Sesame seeds and sliced green onions for garnish

Prepare the Tofu: Cut the pressed tofu into bite-sized cubes. Toss the tofu cubes in cornstarch until they are evenly coated. This coating will help develop a crispy texture when the tofu is fried.

    Cook the Tofu: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. When the oil is hot, add the cornstarch-coated tofu cubes. Fry the tofu for about 8-10 minutes, turning occasionally until they are golden brown and crispy on all sides. Once done, remove the tofu from the skillet and set it aside on a plate.

      Stir-fry the Vegetables: In the same skillet, add the remaining 1 tablespoon of vegetable oil. When the oil is hot, sauté the sliced onion, minced garlic, and grated ginger for about 1 minute until they become fragrant. Add the sliced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry the vegetables for about 5-7 minutes, or until they are tender-crisp, maintaining their vibrant colors.
