2 medium summer squashes, thinly sliced

1 cup fresh corn kernels (approximately 2 ears)

1 red bell pepper, diced

1 small onion, finely chopped

2 cloves garlic, minced

3 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon freshly ground black pepper

2 tablespoons fresh basil, chopped (for garnish)

Juice of 1 fresh lemon

Prep the Vegetables: Begin by washing the summer squashes thoroughly. Slice them into thin rounds and set aside. If using fresh corn, remove the kernels from the cobs. Dice the red bell pepper and finely chop the onion.

    Heat the Oil: Place a large skillet over medium heat and pour in the olive oil. Heat the oil for about 1 minute, ensuring it reaches a shimmer but doesn't smoke.

      Sauté Aromatics: Add the finely chopped onion to the hot skillet and sauté for 2-3 minutes until it becomes translucent, stirring occasionally. Next, add the minced garlic and sauté for an additional 30 seconds, or until fragrant, being careful not to burn the garlic.

        Add Vegetables: Carefully toss in the sliced summer squash and diced bell pepper to the skillet. Cook for about 3-4 minutes, stirring occasionally, until the squash begins to soften but still retains some crunch.
