1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup fresh spinach or kale, chopped

1 teaspoon dried oregano

1 teaspoon salt (or to taste)

½ teaspoon black pepper (or to taste)

¼ cup fresh basil leaves, chopped

½ cup grated Parmesan cheese (optional)

Zest of 1 lemon

Juice of 1 lemon

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the spaghetti and cook according to package instructions until al dente (typically about 8-10 minutes). Once the pasta is ready, reserve ½ cup of the starchy pasta water, then drain the pasta and set it aside.

    Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sauté for about 1 minute, just until fragrant. Be careful not to let it brown.

      Add the Veggies: Incorporate the diced zucchini and red bell pepper into the skillet. Sauté for approximately 5 minutes, stirring occasionally, until the vegetables become tender. Next, add the halved cherry tomatoes and fresh corn, continuing to cook for an additional 3-4 minutes until the tomatoes start to burst and release their juices.
