Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon lemon zest

1 cup heavy whipping cream

1 cup mascarpone cheese

1 teaspoon vanilla extract

2 packs (14 oz each) graham crackers

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium-sized mixing bowl, combine the hulled and sliced strawberries with granulated sugar, lemon juice, and lemon zest. Using a spatula, gently toss the strawberries until they are well-coated with the sugar mixture. Allow them to sit for about 15 minutes at room temperature; this will help create a delicious syrup as the sugars draw out the natural juices of the strawberries.

Make the Whipped Cream Mixture: In a separate large bowl, using an electric mixer, whip the heavy cream on medium speed until soft peaks begin to form. Gradually add in the mascarpone cheese and vanilla extract, then continue to whip the mixture until it reaches firm peaks. The combination should be creamy and smooth, perfect for layering.

Assemble the Cake: Grab a 9x13 inch rectangular dish for assembly. Start by spreading a thin layer of the whipped cream mixture uniformly across the bottom of the dish to create a base. Next, arrange a layer of graham crackers over the whipped cream, breaking pieces if needed to fit snugly.

Layering: Spoon half of the strawberry mixture over the graham crackers, spreading it out evenly to cover the surface. Following this, add a generous layer of the whipped cream mixture over the strawberries, making a smooth layer. Place another layer of graham crackers on top, repeating the process.

Repeat Layers: Continue the layering process with the remaining strawberry mixture and whipped cream. End with a final topping of whipped cream, smoothing it out with a spatula to create an even and attractive surface.

Chill: Cover the cake with plastic wrap and place it in the refrigerator. Allow it to chill for at least 4 hours, although letting it sit overnight is ideal. This chilling time allows the graham crackers to soften and the flavors to meld beautifully together.

Serve: When ready to serve, uncover the cake and optionally garnish with fresh mint leaves and extra sliced strawberries on top for a vibrant and fresh presentation.
