Ingredients

1 sheet frozen puff pastry, thawed

2 cups fresh spinach, chopped

1 cup mozzarella cheese, shredded

1/4 cup cream cheese, softened to room temperature

1/4 cup grated Parmesan cheese

1 clove garlic, minced

1/2 teaspoon onion powder

1/4 teaspoon nutmeg

Salt and black pepper, to taste

1 egg, beaten (for egg wash)

Sesame seeds (optional, for garnish)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent the bites from sticking.

Prepare the Spinach Filling: Heat a drizzle of olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in the chopped spinach and cook for 3-4 minutes, or until the spinach has wilted. Remove from heat and let the mixture cool slightly.

Combine the Filling Ingredients: In a mixing bowl, combine the cooled spinach mixture with shredded mozzarella cheese, softened cream cheese, grated Parmesan cheese, onion powder, nutmeg, salt, and pepper. Stir thoroughly until all ingredients are well incorporated, then set aside.

Roll Out the Puff Pastry: On a lightly floured surface, unfold the thawed puff pastry and gently roll it with a rolling pin to remove any creases. Use a knife or pastry cutter to cut the pastry into 2-inch squares or circles, based on your preference.

Assemble the Bites: Place approximately one tablespoon of the spinach and cheese filling in the center of each pastry piece. Fold the edges over to form a pocket and press the seams together to seal tightly. Arrange the filled pastries seam-side down on the prepared baking sheet.

Apply Egg Wash: Using a brush, evenly coat the tops of the pastry bites with the beaten egg. If desired, sprinkle sesame seeds over the tops for an extra crunch and visual appeal.

Bake the Pastry Bites: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the puff pastry is golden brown and puffed up.

Cool and Serve: Once baked, remove the pastry bites from the oven and allow them to cool for a few minutes before serving. Enjoy these delightful bites warm as a perfect appetizer or snack!
