2 tablespoons extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

2 teaspoons maple syrup or honey

1-2 tablespoons sriracha sauce (adjust to personal spice preference)

2 garlic cloves, finely minced

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper to taste

1 head of butter lettuce or romaine, leaves carefully separated

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

Fresh cilantro or parsley, coarsely chopped, for garnish

Optional: 1 ripe avocado, sliced
