1 can (15 oz) chickpeas, thoroughly drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

½ teaspoon cayenne pepper (adjust based on your spice preference)

½ teaspoon garlic powder

Salt and pepper, to taste

4 large whole wheat or spinach wraps

1 cup fresh spinach leaves, washed and dried

1 medium ripe avocado, sliced

1 medium tomato, diced

½ cup red onion, thinly sliced

¼ cup fresh cilantro, chopped

½ cup tahini sauce or your preferred dressing (optional)

Preheat the Oven: Set your oven to 400°F (200°C) to prepare for roasting.

    Prepare the Chickpeas: In a large mixing bowl, combine the drained and rinsed chickpeas with olive oil. Add the smoked paprika, ground cumin, cayenne pepper, garlic powder, and season with salt and pepper. Toss the chickpeas until they are evenly coated with the spices and oil.
