Ingredients

1 lb (450g) boneless, skinless chicken breast, thinly sliced into strips

2 tablespoons vegetable oil

4 cloves garlic, minced

1-inch piece fresh ginger, grated

1 red bell pepper, sliced into thin strips

1 cup broccoli florets

1 cup snap peas, trimmed

2 green onions, finely chopped (for garnish)

For the Spicy Honey Sauce:

1/4 cup honey

2 tablespoons low-sodium soy sauce

1 tablespoon rice vinegar

1 tablespoon sriracha (adjust to your spice preference)

1 teaspoon cornstarch mixed with 2 tablespoons water (to thicken the sauce)

Instructions

Prepare the Sauce: In a small bowl, combine the honey, low-sodium soy sauce, rice vinegar, sriracha, and the cornstarch slurry. Mix everything together until well blended, then set it aside for later use.

Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the sliced chicken strips, seasoning them lightly with salt and pepper. Cook for about 5-7 minutes, stirring frequently, until the chicken is fully cooked and golden brown. Once cooked, remove the chicken from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Then, add the minced garlic and grated ginger, sautéing them for approximately 30 seconds until they become fragrant. Next, toss in the sliced red bell pepper, broccoli florets, and snap peas. Stir-fry these vegetables for another 3-4 minutes until they reach a tender-crisp texture.

Combine Chicken and Sauce: Return the cooked chicken to the skillet with the sautéed vegetables. Pour the prepared spicy honey sauce over the chicken and vegetables, stirring well to combine. Allow this mix to simmer for an additional 2-3 minutes, or until the sauce thickens and adheres beautifully to the ingredients.

Garnish and Serve: Once done, remove the skillet from the heat source. Sprinkle the chopped green onions over the stir-fry for a fresh touch. Serve hot over a bed of steamed rice or your favorite noodles for a complete meal.
