1 teaspoon vanilla extract

¾ cup buttermilk, at room temperature

1 ½ cups peeled and diced tart apples (approximately 2 medium Granny Smith apples)

½ cup finely chopped walnuts or pecans (optional)

3 tablespoons brown sugar (for topping)

1 teaspoon cinnamon (for topping)
