Spaghetti with Roasted Garlic Butter

12 oz spaghetti

1 head of garlic

1/2 cup unsalted butter (1 stick)

1/4 cup extra-virgin olive oil

1 tsp red pepper flakes (adjust to taste)

1/2 cup freshly grated Parmesan cheese

2 tbsp fresh parsley, chopped

Salt and pepper to taste

Zest of 1 lemon

Juice of 1/2 fresh lemon

Roast the Garlic: Preheat your oven to 400°F (200°C). Take a whole head of garlic and slice off the top to expose the individual cloves. Drizzle about a teaspoon of olive oil over the exposed cloves, then wrap the head in aluminum foil. Place it in the preheated oven and roast for 30-35 minutes, or until the cloves are soft and caramelized. After removing from the oven, allow it to cool for a few minutes. Squeeze the softened garlic out of the cloves into a bowl and mash it thoroughly with a fork until smooth.

    Cook the Spaghetti: As the garlic roasts, fill a large pot with water, add a generous amount of salt, and bring it to a boil. Once boiling, add the spaghetti and cook according to the package instructions until al dente (typically around 8-10 minutes). Before draining, reserve 1 cup of the starchy pasta water, then drain the spaghetti in a colander.

      Prepare the Garlic Butter: In a large skillet, heat the unsalted butter and the remaining olive oil over medium heat. Once the butter has melted and the mixture is bubbling slightly, add the mashed roasted garlic and red pepper flakes. Stir and cook for 2-3 minutes until the oil is aromatic and the garlic is sizzling.

        Combine the Pasta: Add the drained spaghetti directly into the skillet with the garlic butter. Toss the pasta thoroughly to ensure it is evenly coated in the fragrant mixture. If the pasta appears dry, gradually pour in your reserved pasta water a little at a time until you reach your desired consistency.
