4 medium russet potatoes

3 tablespoons extra virgin olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust to taste)

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

Fresh parsley, chopped (for garnish)

Prepare the Potatoes: Start by preheating your oven to 425°F (220°C). Give the russet potatoes a thorough wash under running water, scrubbing them to remove any residual dirt. After washing, dry each potato completely with a clean kitchen towel.

    Cut the Wedges: Once dry, slice each potato in half lengthwise. Take each half and slice it into 4 to 6 wedges based on your preferred thickness. Aim for uniform thickness to ensure that all the wedges cook evenly.

      Make the Spice Mix: In a large mixing bowl, combine the extra virgin olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, sea salt, and freshly ground black pepper. Mix them together until the ingredients are well combined into a smooth paste.
