1 lb Brussels sprouts, trimmed and halved

6 slices of thick-cut bacon, chopped into bite-sized pieces

3 tablespoons pure maple syrup

1 tablespoon balsamic vinegar

1 teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon salt

¼ teaspoon freshly ground black pepper

2 tablespoons extra virgin olive oil

1 tablespoon Dijon mustard (optional, adds a nice tang)

Fresh parsley, chopped (for garnish)

Preheat Oven: Start by preheating your oven to 400°F (200°C) to ensure it reaches the right temperature for roasting.

    Cook the Bacon: In a large skillet over medium heat, add the chopped bacon. Cook until crispy and golden, which should take about 5-7 minutes. Once cooked, use a slotted spoon to transfer the bacon to a plate lined with paper towels to drain excess fat, but don’t discard the fat left in the skillet.

      Sauté the Brussels Sprouts: Add the halved Brussels sprouts to the skillet with the warm bacon fat. Toss well to coat them in the fat and sauté for approximately 5 minutes, stirring occasionally until they start to soften and caramelize slightly.

        Prepare the Sauce: In a small bowl, combine the maple syrup, balsamic vinegar, smoked paprika, garlic powder, salt, black pepper, and olive oil. Whisk until fully blended. For an extra tangy twist, mix in the Dijon mustard.
