Ingredients

1 lb Brussels sprouts, trimmed and halved

4 cloves garlic, finely minced

3 tablespoons olive oil

1 teaspoon sea salt

½ teaspoon freshly cracked black pepper

1 teaspoon smoked paprika (substitute with regular paprika for a milder flavor)

1 tablespoon balsamic vinegar

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, finely chopped (for garnish)

Instructions

Preheat the Oven: Set your oven to 425°F (220°C) to ensure a hot environment for achieving crispy Brussels sprouts.

Blanch the Brussels Sprouts: Fill a large pot with water, add a generous pinch of salt, and bring it to a rolling boil. Carefully add the halved Brussels sprouts and let them cook for approximately 5 minutes, or until they are tender yet still firm. Drain them in a colander and allow them to cool for a few minutes.

Smash the Sprouts: Place each halved Brussels sprout on a baking sheet lined with parchment paper. Using a fork or the bottom of a glass, gently press down on each half to flatten them a bit, creating a lovely smashed appearance.

Make the Garlicky Sauce: In a small mixing bowl, combine the minced garlic, olive oil, sea salt, black pepper, smoked paprika, and balsamic vinegar. Whisk until the ingredients are well incorporated.

Coat the Sprouts: Drizzle the garlicky sauce over the smashed Brussels sprouts, ensuring they are well-coated for maximum flavor. If needed, use a spatula to gently toss them for even coverage.

Roast to Perfection: Insert the baking sheet into your preheated oven and roast the Brussels sprouts for 20 to 25 minutes. Keep an eye on them and give them a gentle toss halfway through to ensure even browning and crispiness.

Add Optional Cheese: If you’re opting for the Parmesan cheese, sprinkle it over the Brussels sprouts during the last 5 minutes of roasting. This will allow the cheese to melt and become deliciously crispy.

Garnish and Serve: Once the Brussels sprouts are golden brown and crispy, remove them from the oven and let them cool slightly. Garnish with chopped fresh parsley before serving. Enjoy your scrumptious crispy smashed Brussels sprouts while they're warm for the best flavor!
