2 pounds beef chuck roast, cut into 1-inch cubes

3 cloves garlic, minced

8 ounces mushrooms, sliced (button or cremini)

2 tablespoons Worcestershire sauce

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

4 cups beef broth

1 tablespoon Dijon mustard

1 cup sour cream

2 tablespoons all-purpose flour (optional, for thickening)

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Brown the Beef: Heat a large skillet over medium-high heat. Add the beef cubes in batches, searing them for about 4-5 minutes on each side until they are browned all over. Once browned, transfer the beef into the slow cooker.

    Sauté the Vegetables: Using the same skillet, add the finely chopped onion and sliced mushrooms. Sauté for about 3-4 minutes or until the onion becomes soft and translucent. Then, add the minced garlic and continue cooking for an additional minute until fragrant.
